Recipe: Sautéed Mushroom & Arugula Salad
On Monday my mom and I attended a cooking class with a focus on salads and I was able to gather a lot of great ideas. My husband and I had an informal dinner party last night so i decided to try one of the easier and tastier recipe from the class: Sautéed Mushroom and Arugula Salad. It was a major success! I paired the salad with grilled steak and it was a yummy and easy dinner. And we all know that easy recipes are so important for us busy moms, so I thought I'd share it with you all:
1 cup sliced crimini mushrooms 6 cups arugula lettuce 3/4 cup shaved parmesan 1 teaspoon herb de Provence seasoning (or any of your favorite herbs) 1 avocado 1 tablespoon olive oil 1 teaspoon balsamic vinegar
Sauté the mushrooms with a bit of olive oil, and herb de Provence for about 5 minutes. Allow to cool in the fridge for about 10 minutes (or freezer for 2 minutes if your pressed for time). Place Arugula, chopped avocado, parmesan and mushrooms in a bowl then toss with the olive oil and balsamic for dressing. And that all!
This is great for serving guests because is easy, delicious, and it looks pretty :)
